These crispy-on-the-outside, gooey-on-the-inside meatloaf bites bring big comfort in a small package! With melty cheddar centers, smoky BBQ glaze, and a golden air-fried crust, they’re weeknight-friendly and blog-gold material. Bonus: they cook in 15 minutes thanks to the air fryer!
Ingredients:

1 lb ground beef (80/20 for max flavor)

1/2 cup breadcrumbs

1 egg

1/4 cup milk

1/4 cup finely chopped onion

1 tbsp Worcestershire sauce

1 tsp garlic powder

1/2 tsp smoked paprika

Salt & pepper to taste

3 oz cheddar cheese, cut into 1/2-inch cubes

1/2 cup BBQ sauce (store-bought or homemade)
Instructions:

In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, Worcestershire, garlic powder, paprika, salt, and pepper. Mix until just combined — don’t overwork it.

Take a heaping tablespoon of the mixture, flatten it in your palm, and place a cube of cheddar in the center. Wrap the meat around it to form a ball. Repeat until you have about 12 meatballs.

Preheat your air fryer to 375°F (190°C). Lightly spray the basket with oil.

Place the meatloaf bites in the basket (don’t overcrowd). Air fry for 10 minutes.

Brush the tops with BBQ sauce and cook 5 more minutes, until cooked through and caramelized.
